The quality is created through this manufacturing process that uses traditional underground kilns that are filled with green wood.

Greenwood is that of recently felled trees and although not good for burning on a campfire it is great for making dense long burning charcoal.

Lower quality charcoal is produced by starting with dried wood, often scrap wood which is why occasionally you hear about nails or even worse being found in the ash after a cook.

A way of telling the difference between the quality of charcoal is its weight. Charcoal made from green wood is much denser and as such heavier. This density helps with the hotter and longer aspect of how Texas Original Charcoal burns.

This is how quality becomes more important than quantity. A bulky bag of the same weight will not have the same burn time as quality charcoal which takes up less space.
